Ever wanted a quick dish to take to a pot luck that really 'Wows', but doesn't take forever or costs a fortune? Well, you're in luck!!
Try this awesome CHEESE BALL! Because really, who says no to cheese? I know. I'm going really bold with the title here. Perfection is typically an impossible level to reach, but I chose to use it in the name of these pancakes because I have yet to find another paleo pancake recipe that comes out the same for me every time, without burning, that can flip fairly easily, can be stored in the fridge for meal prep purposes, and doesn't taste like fried eggs.
I scoured Pinterest, Instagram, and Google for anything and everything regarding how to make paleo-style pancakes. After several days, I gave in and just started experimenting. I've never been one to make a recipe as is, but this was going into unknown territory for me and with ingredients I wasn't familiar with I didn't want to be wasteful. I tried a few recipes that I had found with the most beautiful pictures of pancakes and thought if THEY can do that, I can definitely do that! WRONG!! Every time they came out flat, burnt tasting, or just plain burnt before they would hold together. I thought about giving up, but food is one of my passions and I refused to let it beat me. So one morning I just picked parts from several different recipes I had remembered reading and decided to go for it. And below is the result. Ever tasted something so delicious that it forced your eyes to close and make your mouth go "mmmmmmMMMmm"? Yes, that feeling, and that's exactly what I was going for when I created this appetizer last night. "Wow." That's the first thing out of everyone's mouth that has tried it this Thanksgiving Day.
I have a love of all things creamy and cheesy and warm. This pesto dip hits all three of those in a way I thought I could only imagine. It COULD be served hot or cold, but hot cheese? Who says no to that? Next time I'll mix it up a little and add something like spinach, or bacon, or artichokes, or really just about anything you could possibly want to bake with hot cheese just to change things up! |
